If you want to unpair apple watch from your iPhone, you can do it without your phone. Here’s how!

Open watch app on your iPhone.
In the Watch app, tap the watch tab then tap your watch at the top of the screen.
Tap the info button next to the watch that you want to unpair, then tap apple watch
For GPS + Cellular models, you need to have your plan set up before you can use this feature. If you don’t have a cellular plan, contact your carrier.
Tap the My Watch tab.
Open the Apple Watch app on your iPhone. Tap the My Watch tab. Tap your watch at the top of the screen. Tap the information button next to your watch. Scroll to the bottom and tap Unpair Apple Watch.
Tap General > Reset.
If you can’t access your iPhone or if your Apple Watch is disabled, you can still erase all content and settings on your device.
Just follow these steps:
1. On your Apple Watch, tap General > Reset.
2. Tap Erase All Content and Settings.
3. For extra security, enter your passcode. If you can’t remember your passcode, you’ll need to erase your device and set it up as new.
4. Tap Erase All.
5. Wait for the process to finish, then tap Set Up as New [Device].

If you’re selling or giving away your Apple Watch, you’ll need to unpair it from your iPhone. When you unpair, your Apple Watch will back up automatically. You need to turn off Activation Lock before you can give away or sell your watch.
Here’s how to unpair:
1. On your iPhone, open the Watch app.
2. Tap the My Watch tab, then tap General > Reset > Erase All Content and Settings.
3. Enter apple id password, then tap Erase everything.

If you can’t access your iPhone, you can still unpair your Apple Watch. Just make sure that your watch is connected to Wi-Fi, then follow these steps:
1. On your watch, open the Settings app.
2. Tap General > About.
3. Tap the info icon next to your Apple Watch.
4. Tap Unpair Apple Watch.
5. Enter apple id password then tap Erase All Content and Settings.

If you have an Apple Watch and iPhone, unpairing them is easy: just deactivate iCloud on your Watch and erase it. But if you don’t have your iPhone or can’t turn off iCloud, you can unpair your devices from each other.
Here’s how to unpair your devices:
On your Apple Watch, open the Settings app.
Tap General > About.
Tap the info icon next to the watch’s name.
Tap Unpair Apple Watch.
