There are two ways to turn off apple watch One is to press and hold the side button until the power off slider appears. The other way is to go to Settings > General > Shut Down. If you want to restart apple watch press and hold the side button until the Apple logo appears.

A hard restart on the Apple Watch is different than resetting or restarting your iPhone. On an iPhone 7 or newer, you need to press and hold both the side button and volume down button simultaneously. But on the Apple Watch, you press and hold both the side button and Digital Crown for at least 10 seconds, until you see the Apple logo appear.
