Ingredients:
-1/2 cup sugar
-1/2 cup packed brown sugar
-3 tablespoons all-purpose flour
-1 teaspoon ground cinnamon
-1/4 teaspoon ground ginger
-1/4 teaspoon ground nutmeg
-6 to 7 cups thinly sliced peeled tart apples
-Dough for double-crust pie

Egg wash (1 egg beaten with 1 tablespoon water)

Directions: Preheat oven to 375°. In a small bowl, combine sugars, flour and spices; set aside. In a large bowl, toss apples with sugar mixture until coated. On a lightly floured surface, roll one half of dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim even with rim. Add filling; dot with butter cubes. Roll remaining dough to a 1/8-in.-thick circle. Place over filling; trim, seal and flute edge. Cut slits in top allowing steam to escape during baking.. Beat egg and water; brush over crust lightly coated with sugar if desired.. 1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg

1/2 cup sugar

1 teaspoon ground cinnamon
1/4 teaspoon ground ginger

6 to 7 cups thinly sliced peeled tart apples
2 tablespoons lemon juice
DOT red food coloring (optional)
1 tablespoon butter
1 large egg white

Directions:
Step 1
Preheat oven to 375 degrees F (190 degrees C).
Step 2 mix sugar, flour, cinnamon, ginger, and nutmeg; set aside. Place the bottom crust in a pie pan. Combine apples and lemon juice; toss with sugar mixture. Pour into crust. Dot with butter. Cut remaining pastry into 1/2 – 3/4 inch wide strips; make lattice top. Crimp and flute edges. Beat egg white until foamy; brush over crust. Sprinkle with sugar if desired. Bake for 50 minutes or until crust is golden brown and filling is bubbly.

juice of 1/2 a lemon
2 tablespoons butter, melted
Instructions
Preheat oven to 375 degrees F (190 degrees C).
Mix together the sugar, flour, cinnamon, ginger and nutmeg, and set aside.
Toss the sliced apples with the lemon juice.
Sprinkle 1/4 of the sugar and spice mixture over the bottom of the pie crust.
Layer the apple slices into the crust, sprinkle with sugar and spice mixture between each layer. Pour the melted butter over the top.
Place remaining crust over the top of the pie, seal and flute edges. Cut slits in top crust to allow steam to escape during baking. If you like, you can brush top crust with milk or beaten egg white and sprinkle with sugar prior to baking. This will give you a nice sparkling finish to your pie.
