How to Make an Apple Cake

What You Will Need

To make an apple cake, you will need:
-1 1/2 cups of all-purpose flour
-1 teaspoon baking powder
-1/4 teaspoon baking soda
-1/2 teaspoon salt
-1 teaspoon cinnamon
-1/4 teaspoon nutmeg
-3/4 cup sugar
-3 tablespoons butter, softened
-2 eggs
-1 teaspoon vanilla extract
-2 cups peeled and grated Granny Smith apples

The Recipe


-1 pound (4 sticks) unsalted butter, at room temperature, plus more for the pan
-2 1/2 pounds Granny Smith apples, peeled, cored, and cut into 1/2-inch dice
-2 cups sugar
-4 large eggs, at room temperature
-1/4 cup pure vanilla extract
-3 cups all-purpose flour
-1 teaspoon baking powder
-1/2 teaspoon baking soda
-1 teaspoon kosher salt
-1 cup raisins (optional)


1.Preheat oven to 350 degrees F. Butter a 13 by 9 by 2-inch baking pan. Line the bottom with parchment paper and butter the paper. Set aside.
2.In a large bowl, toss together the apples, sugar, butter, eggs, and vanilla.
3.In another bowl, whisk together the flour, baking powder, baking soda, and salt. Stir the dry ingredients into the wet ingredients until just combined. Stir in the raisins (if using). Pour the batter into the prepared pan and bake until a cake tester comes out clean when inserted into the center of the cake, about 1 hour 10 minutes. Let cool completely in the pan on a wire rack.
4.To make the optional caramel glaze: Melt 1/2 cup sugar in a small saucepan over medium heat until it forms a dark amber caramel. Off heat, whisk in 2 tablespoons freshly squeezed lemon juice (be careful as it will splatter). While whisking constantly, slowly add 6 tablespoons unsalted butter to the mixture until combined; then add 1/4 cup heavy cream and whisk until smooth (the mixture will splatter when you add the cream). Set aside to cool for 5 minutes before spooning over cake

Baking the Cake

Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9×13 inch baking pan.

Sift together the flour, salt, baking powder, and baking soda. Set aside.

Cream together the butter or margarine and sugar until light and fluffy. Add eggs and beat well.

Add the flour mixture to the butter mixture alternately with the buttermilk, starting and ending with the flour mixture. Stir in the vanilla extract. Fold in the apples. Pour batter into prepared pan.

Bake at 350 degrees F (175 degrees C) for 30 minutes or until a toothpick inserted into center of cake comes out clean. Cool cake before serving.
