When you use a credit or debit card with Apple Pay, the actual card numbers are not stored on your device, nor on Apple servers. Instead, a unique Device Account Number is assigned, encrypted and securely stored in the Secure Element, a dedicated chip in iPhone and iPad. Each transaction is authorized with a one-time unique dynamic security code.

Your full card number is never shared by Apple with merchants or transmitted with payment. And when you pay, your card numbers are never shared by Apple with merchants. In addition, paying in stores or within apps doesnt require Wi-Fi, so if you cant make a call, you can still pay.
